If you need some quick energy, this will definitely do the trick. I had never tried this mysterious Southern root and decided to finally give it a shot with some yuca fries.
2 Large Yuca
Preheat oven to 450 degrees F.
Place 2 large yuca into a large pot and fill with water.
Bring to a boil.
Strain yucca from water and rinse with cold water.
Peel yuca with a paring knife.
Chop in half and then slice each half into french fry shape.
Toss in Extra Virgin Olive Oil or melted Coconut oil.
Spread on a baking pan.
Add salt, pepper, and garlic powder.
Bake 12-15 minutes
Bake another 12-15.
Serve alone or with other roasted veggies!
