A warming dessert that makes a great finisher to a family meal. By making individual servings, you can make sure you don't over-indulge, and keep some leftovers for later!

Ingredients

3 Eggs

1/3 Cup Hot Water

2/3 Cup Melted Ghee

1 1/2 Cups Pitted Dates

1/2 Cup Honey

1/3 Cup Natural Yoghurt

2 1/2 Cups Almond Meal

1 1/2 tsp Bicarbonate of Soda

Directions

Preheat oven to 175 C

Grease a muffin tray with some ghee

Use a food processor to blend the dates and hot water into a smooth mixture

Whisk the eggs, honey and ghee until pale a fluffy (electric whisk preferable)

Add the date mixture, yoghurt, almond meal and bi-carb and combine well

Spoon the mixture into the muffin tray cups

Bake for 30-40 minutes

Serve with your choice of Paleo ice cream or whipped coconut cream

You can make a caramel sauce by warming honey in a pan, then after cooling slightly - whisking in some coconut cream.
