Slow-Cooked Pulled Pork & Roast Veggies

A deeply moreish alternative to a traditional roast dinner. Tender pulled pork, with just the right amount of seasoning, roasted veggies of your choice and topped with the all-important crackling.

2.5lb Pork Loin

Ground Black Pepper

Ground Salt

2 Fresh Garlic Cloves

2 Tbsp. Extra Virgin Olive Oil

Your choice of veggies


Pre-heat your oven to 200C

Coat a baking tray or dish with some of the oil

Place the meat in and cover generously with more oil

Cover the top of the meat with plenty of salt and pepper

When the oven is at temperature, place the tray in and leave for 10 minutes

Then drop the temp to 140C and leave for 4 to 4.5 hours

Use your judgement for the exact timing, based on the shape and weight of the meat cut

Each hour, remove the try and spoon the juices back over the joint

40 mins prior to the end, place the garlic gloves and veggies into the tray to roast

When done, carefully remove the crackling with a knife

Put aside to cool - or if you prefer an extra crunch, place under the grill for a little longer

Let the meat cool for at least 15 minutes

Take two forks, and gently pull the meat strands away from the body of the meat

Serve immediately

As you can imagine, leftover pulled pork can be used many different ways. Take care to store quickly and carefully to prevent it drying out.
