Red Onion Omelet with Smoked Salmon

This makes for a super tasty lunch, or a decadent breakfast. Plus, there is so much room for you to make it your own by adding your favorite herbs or garnishes. We prefer to add the salmon onto the omelet afterwards, as heating can affect the taste. Very easy, very fast and very tasty! We've chosen to use a fry pan/grill combo to heat each side of our omelet - but you can of course flip the omelet within the pan if you're feeling confident!

1 Tbsp. Ghee

3 Slices of Smoked Salmon

3 Eggs (Free-Range)

1/4 Red Onion (chopped)

Fresh Dill

Salt & Pepper


Preheat your grill to 220 C.

Crack the eggs into a bowl and beat until smooth.

Mix in salt and pepper to taste.

On a medium heat, melt the ghee in a frying pan.

Fry the onion for a couple of minutes, until soft.

Add the eggs to the onion and cook until the base is cooked (approx 1 min).

Move the pan to under the grill to cook the top for a further 1 or 2 minutes.

Place the omelet onto a plate, and drap with the smoked salmon.

Curl the omelet over the salmon, and garnish with a sprig of dill.

Add some greens by adding chopped broccoli into the omelet mix, and/or a green leaf salad on the side.
