Porcini-Kale Pesto and Kelp Noodles

Kelp noodles are not only a great substitute, but carry huge health benefits in their own right. Combine them here with mushrooms and pesto (amongst other things) to make a simple dish that's bursting with flavor.

2 Tbsp.chopped basil

1 diced clove of garlic

2 oz. vegan soy-free soft cheese

1-2 Tbsp. Extra virgin olive oil

2 Tbsp. dried porcini mushrooms

1 cup finely sliced mushrooms

1 cup shredded kale (or spinach)

Pepper to taste

12 oz. sea kelp noodles


Prepare sea kelp noodles then set aside.

Mix the remaining ingredients in a food processor, adding olive oil as desired.

Toss noodles with pesto.
