Eggs are a great staple that can be freely enjoyed on a Paleo diet, and an omelet is a great way to use them to create a delicious lunch or snack. This omelet combines broccoli, feta and dill to create a tasty but healthy meal.

Ingredients

Cooking spray

1 cup chopped broccoli

2 tablespoon crumbled feta cheese,

1/4 teaspoon dried dill

2 large eggs, beaten

Directions

Preparation

Chop the broccoli into bite-size chunks.

Break the eggs into a mixing bowl, and beat until smooth.

Sprinkle the feta and dill into the bowl and mix in gently.

Cooking

Heat a non-stick skillet over medium heat. Coat the pan with cooking spray.

Add the chopped broccoli, and cook for approx. 3 minutes.

Add the egg mixture to the pan.

Cook for 3 to 4 minutes.

Flip the omelet and cook for a further 2 minutes, or until cooked through.

You may wish to leave the broccoli and feta out of the omelet until it is ready to serve. You can then spread them across the top of the omelet, and fold over for a sandwich effect.
