This Chia seed and coconut milk mixture makes the perfect Paleo-friendly pudding. Enjoy it at breakfast or for a snack. With lots of healthy anti-inflammatory omega-3 Paleo pudding is a also a great way to fill up on fiber. This guilt free pudding is the way to go!

1 cup coconut milk

1/2 tablespoon honey

1/4 cup chia seeds


Add chia seeds, honey and coconut milk together in a small bowl.

Set in refrigerator overnight.

If your pudding looks thick and the chia seeds have gelled then just add any fresh fruit toppings, nuts and cinnamon
