For many, a good curry is the ultimate comfort-food dinner. The aromatic spices create a distinctive mood in which to enjoy a filling meal.

Coconut Oil

2 Onions

2 Free Range Chicken Breasts

2 Cans of Coconut Cream

1 Zucchini

2-3 Carrots

1/2 Cup Raisins

6 Mushrooms

1.5 tsp Ginger

1.5 tsp Curry Powder

Add Sea Salt to taste



Dice the onions.

Peel and chop the zucchini, carrots and mushrooms to bit sized pieces.

Sliced the chicken breasts into small strips or cubes.


Over medium heat fry diced onions and some coconut oil in a pan.

When the onions turn soft, slice the chicken into strips and add to the pan.

When the chicken is cooked through add the coconut cream and water (as necessary)

Add in all vegetables, spices and season to taste.

Let curry to simmer for 20 minutes or so, until cooked

Can be served with Cauliflower rice.

If you like things spicy, don't forget to add some chopped red chilli peppers according to the heat levels you can handle!
